Cafe Marco serves classic Cebuano well-loved dishes like lechon, humba, balbacua, Cebu chorizo and more, alongside their international buffet spread. This year, Sugbusog is highlighted by two special dishes from recipes by two of Cebu’s acclaimed foodies Ms. Aissa Dela Cruz and Dr. Nestor Alonso.
Tita Aissa’s Pancit Luglug is similar to the Tagalog’s ‘palabok’ but instead of just using shrimp bouillon, she also added pork stock to add more depth to the sauce’ flavor. Also, the noodles are thicker than that of palabok, and is made with cornstarch.
Dr. Nestor’s Cebu Humba has the qualities of the classic humba but made tastier and fancier with the use of different spices.
Both the featured dishes are great tasting and delicious. Reminds me so much of old town fiesta celebrations. Must-tries!
